So I ended up, once again, with a whole bunch of plantain bananas that decided to ripen all at the same time – a classic Nagercoil moment! Growing up, plantain bananas were always around, whether here in Nagercoil or even during my childhood in Saudi Arabia. This time, instead of making my usual Chocolate Chip Banana Bread, I decided to switch things up a bit and experiment with something new: plantain bars sweetened with palm jaggery.

 

The combination of ripe plantain and palm jaggery turned out to be a match made in heaven 🤤! it gives these bars a deep, rich flavor that’s so much more interesting than regular banana bread. I love serving them warm for tea time or packing them into lunchboxes for a sweet surprise. If you’ve got a few overripe plantains sitting around, trust me, you’ll want to give this one a try!

    This recipe turns ripe plantain bananas and palm jaggery into deliciously rich Plantain Bars that are soft, moist, and wonderfully aromatic. Follow these easy steps to create a treat that’s perfect with tea or topped with a scoop of ice cream.

    Step1

    Beat the eggs: In a large mixing bowl, beat the eggs and vanilla together until smooth.

    Step2

    Combine wet ingredients: Add the sugars, mashed/pulped plantain, and oil to the beaten eggs. Mix well until everything is thoroughly combined.

    Prepare the dry ingredients: Sift the flour and baking soda together to remove any lumps.

    Mix and fold: Add the dry ingredients to the plantain mixture along with half of the chopped cashews and raisins. Gently fold everything together until evenly mixed.

    Transfer to baking tin and add toppings: Pour the batter into a pre-greased shallow baking tin. Sprinkle the remaining cashews and raisins over the top and arrange the plantain strips decoratively.
